Perfect Roasting Potatoes
For this recipe we are using the Baking Tray from our Mermaid Companion Trio (M4990 available from the online store) Which has been shortlisted for the Excellence in Houswares Award 2006 !!!
Buy a "floury" potato such as Maris Piper or King Edwards as they make the best roast potatoes. Peel and portion the potatoes and par steam them for about 10 minutes. They could be boiled, but you should ensure that they are thoroughly drained and as dry as possible. Give the potatoes a shake so that the outside of the potato pieces begin to crumble a little.
Cover the base of your Mermaid Hard Anodised tray with a generous layer of olive oil or your preferred fat and heat up on Gas No 7, or 220�C until hot.
Carefully, remove the tray from the oven and gently place the potatoes into the oil or fat � they should sizzle! � then spoon some of the oil/fat over the potatoes. Put the tray back into the oven and roast for about 5 �7 minutes. Remove the tray from the oven and turn the potatoes, you will find that the tray has already coloured the potatoes underneath! Turning the potatoes at this point will also prevent them from sticking. You may want to turn them again after another 10 minutes and it shouldn�t be long before they are ready to serve. Sprinkle with a little freshly ground rock salt before serving.
