Mixed Berry Cheesecake

            Ingredients:
 
            175g digestive biscuits
            125g unsalted butter (melted)
            50g chopped hazelnuts
            zest of 2 lemons
            600g Philadelphia cream cheese
            750ml/ 1 1/4 pint whipping cream
            100g castor sugar
            12-15 even sized strawberries
 
 
How to make it!
 
  1. Place the biscuit and melted butter in the food processor and mix to a crumb. Add the chopped hazelnuts and mix for 10 seconds. Place the ring on a serving plate and spoon the biscuit mixture into the base of the ring. Smooth it level with the bowl of a spoon, then allow to chill in the fridge.
  2. In a bowl, mix the cream cheese and 150ml of the double cream. Add the grated zest of 2 lemons and mix. In a seperate bowl whisk the remaining 600ml double cream with the sugar. Fold it into the lemon cream mixture.
  3. Cut the strawberriesin half vertically and line the inside of the gateau ring with thier cut sides facing the metel. Sppon the mixture into the metel ring and smooth over the surface with a pallette knife. Refridgerate for 4 hours until set. Gently slide off the ring before decorating with your choice of mixed berries and fruit.
